The stuffed Goose Neck cooked by our House follows the recipe inherited from our grandmothers, which consists in removing the skin from the neck of the Goose and degreasing it first.
Next, the neck is stuffed with pork meat mixed with a fine Goose Foie Gras and flavoured with truffle and Cognac.
Once prepared and garnished, this neck is covered with goose fat, which gives it a real tenderness.
The Goose Neck is particularly appreciated for its generous and authentic flavours which smell good our soil.

The geese that were chosen for this recipe were chosen for their quality and their origin labelled "Oies du Périgord".

Stuffed goose neck 60% composed of: pork meat, goose liver 20% of the stuffing, goose neck skin 10%, eggs, salt, Cognac, truffle juice, pork gelatin, pepper. Duck fat 40%.
