Gourmet Recipe Ideas with French Caviar from Aquitaine

Since last year, we have been offering Caviar.

We have selected two companies renowned for the quality and origin of their products: Perle Noire located near us in the heart of the Périgord Noir and Sturia, near Bordeaux. Both are specialised in French Aquitaine Caviar and have very precise breeding, manufacturing and maturation processes.

Caviar, whether it comes in Prestige, Osciètre, Classique or Impertinent, thrills our taste buds but also inspires us with gourmet recipes, full of racy and original flavours.

We therefore propose these two simple and very full-bodied recipes, inspired by Perle Noire.

Black Pearl Caviar & Ratte Potatoes

Recipe for 6 people - Preparation time 30 minutes :

Ingredients: 

12 rattes potatoes - 50g of Perle Noire Caviar (the quality you want: Impertinent or Classic) - 100g of double cream - 1 lemon - 50g of chopped chives - salt - pepper and Espelette pepper .

How to make the recipe :

Cook the potatoes in their skins.

Season the cream with finely chopped chives, lemon juice, salt, pepper and Espelette pepper.

For the dressing: cut the potatoes in half and cover each half with cream and Caviar.

Make sure the potatoes are warm.

To ideally accompany this recipe, we recommend serving a fruity rosé wine such as the CuvéeMirabelle de la Jaubertie or the one from the Maison Le Fagé

Black Pearl Caviar & Scallops a la Plancha

Recipe for 6 people - Preparation time 10 minutes :

Ingredients: 

18 scallops - 50g of Perle Noire Caviar - salt - pepper - Espelette pepper

How to make the recipe :

Preheat your griddle.

You can put a drizzle of olive oil on your shells but it is not obligatory.

Place the scallops on the hot plancha.

When they are just seized, remove them.
