Until now, we have been offering you our excellent Périgueux Sauce, one of the great classics of French gastronomy and of our family business.
This concentrate of noble flavors: truffles, foie gras, mushrooms, cognac, and port is the result of a slow reduction of these ingredients, selected for their exceptional quality.
This year we decided to innovate with two new sauces: Foie Gras and Raspberry.
For these sauces, we have also chosen exceptional ingredients such as highly fragrant raspberries, raspberry brandy, foie gras, and port wine, combined with a very creamy balsamic cream in the case of the raspberry sauce.
From these gourmet flavors, we obtain an exceptional concentrate, also the result of a slow reduction (several days): a nectar that will enhance all your gourmet recipes.
Ingredients:
Foie Gras Sauce: Duck broth (water, carrots, onions, leeks, tomatoes, tomato paste, duck fat, aromatic garnish), raspberry jelly 15% (raspberry juice, cane sugar, lemon juice, pectin), balsamic vinegar 5%, sugar, port, raspberry brandy, corn starch, salt, pepper, sulfites.
Périgueux sauce: Duck stock (water, carrots, onions, leeks, tomatoes, tomato paste, duck fat, aromatic garnish), duck foie gras, button mushrooms, Cognac, truffle juice (tuber mélanosporum), corn starch, salt, pepper, sulfites. Port, Madeira, salt, truffle pieces 1% (tuber melanosporum), pepper, sulfites.
Raspberry Sauce: Duck broth (water, carrots, onions, leeks, tomatoes, tomato paste, duck fat, aromatic garnish), raspberry jelly 15% (raspberry juice, cane sugar, lemon juice, pectin), balsamic vinegar 5%, sugar, port, raspberry brandy, corn starch, salt, pepper, sulfites.
