The chicken we cook in this recipe is seasoned, cooked in duck fat and presented as a roast surrounded by a beautiful and aromatic jelly.
We are almost the only Maison d'Artisans to offer this old typical Périgord recipe that we have brought up to date.
In the past, this roast was cooked at home, in the family, according to tradition and then put in jars.
We inherited this recipe from our mother.
Thanks to its secret, it is both tender and tasty, simply cooked in duck fat with a little salt and pepper, without any colouring or preservatives or nitrite salt.
The hens we choose are always selected for the quality of their meat and the way they have been fed and raised.
Ingredients:
Chicken meat 56%, jelly (water, port, pork gelatine), duck fat, salt, pepper, sulphite.
