If our semi-cooked Duck Foie Gras has been awarded several medals at the Concours Général Agricole (notably the Gold Medal in 2019), it is thanks to its complex combination of a soft, melting texture and the authentic taste of duck.
It is cooked rigorously and at a lower temperature which gives it all its incomparable flavour and preserves the long and powerful aroma of the duck liver.
We cook our semi-cooked foies gras naturally, without adding any colouring or preservatives, with a simple seasoning: salt and pepper. The duck foies gras that we select come from farms in the South West of France. These ducks are raised and fed according to very precise specifications.
Perle Noire's Caviar Classique is a Perigord Caviar and like our terroir, it is full-bodied and full of character. On the palate, it rolls and releases marine and very full-bodied flavours.
