Our Speciality of Semi-Cooked Duck Foie Gras with Chestnut Cream is exceptional because it forms a delicious and perfectly matched couple: the powerful aroma of duck foie gras and the smoothness and creaminess of chestnut cream, so full of flavour.
The duck livers used for this foie gras are guaranteed Canard du Sud-Ouest and have been selected for their beautiful yellow colour, their suppleness and their size. To preserve the flavour and smoothness of the semi-cooked foie gras, we cook it at a lower temperature.
This allows the duck livers to retain their full flavour and melt-in-the-mouth quality. This speciality with such a sweet flavour will delight gourmets. Note that it is made by hand without the addition of colouring agents or preservatives.
