We only sell fresh Extra Goose Foie Gras. We rigorously select these livers according to their beautiful yellow colour, their suppleness, their texture and their weight since a quality raw goose foie gras must be less than 700 grams to avoid giving off too much fat.
The livers we offer weigh approximately 650g (+/-25g) and bear the label "Oies du Périgord".
These livers are vacuum-packed to preserve their freshness and quality for about 10 days. Some people prefer raw Goose Foie Gras to Duck Foie Gras for the delicacy of its lobe and its great finesse of taste.
