We cook our Chicken Confit according to the same recipe and the same know-how as for our Duck Confit and Goose Confit.
The chicken legs are cooked in duck fat to make them tasty and crispy, but because of the nature of the chicken meat, they are less fatty and you will enjoy the simple and authentic flavour.
Like most of our recipes, they are cooked without colouring, preservatives or nitrite salt: just a little salt and pepper.
Thus, the fragrance of the chicken married to a very full-bodied duck fat brings back to life this traditional Périgord recipe which remains quite confidential!
That's why, at Foies Gras Grolière, we decided to put them back on the map.
The legs that were chosen for this recipe were chosen for the quality of their taste and the tenderness of their meat.
